The Fluffy Blueberry Buttermilk Pancake Recipe

Ingredients:

  • 2 cups all-purpose flour (don’t even think about using whole wheat)
  • ¼ cup sugar
  • 1 ½ tsp baking soda
  • 1 tsp kosher salt
  • 1 ½ cups fresh blueberries (yes, fresh! Frozen just won’t cut it)
  • 2 cups buttermilk (the real deal, not that low-fat nonsense)
  • ¼ cup unsalted butter, melted (because everything’s better with butter)
  • 2 large eggs
  • 1 ½ tbs. vanilla extract

Steps:

  1. Whisk flour, sugar, baking soda, and salt in a large bowl.
  2. Rinse those gorgeous blueberries under cold water, shake off excess water, and gently mix into the flour mixture with a spatula. Be gentle; you don’t want to break the berries.
  3. In a separate bowl, combine the buttermilk, melted butter, vanilla, and eggs. Stir until smooth, creamy, and utterly tantalizing.
  4. Pour the wet mixture into the flour mixture and gently mix with a spatula until smooth. It will be a pretty thick consistency.
  5. Let the batter rest for 10 minutes, if you can resist the temptation. This will allow the flour to absorb all that lovely buttermilk goodness.
  6. Grease a flat griddle or pan with butter (because, again, everything’s better with butter) and heat to medium.
  7. Evenly spoon the batter onto the pan and cook for 1-2 minutes. You’ll know it’s time to flip when the edges start to dry and there are bubbles on the surface. Flip and cook for 1-2 minutes. The pancake should be golden brown and cooked through.
  8. Cook, flip, repeat: 12 pancakes, 2-3 at a time, pure morning bliss.
  9. Serve warm with butter and pure maple syrup (none of that artificial sh*t- the real deal is worth the splurge).
